Black- and Queer-Owned Vegan Café, LesbiVeggies, Opening in Audubon

In early February, this meal-prep and catering service is moving into its own café space. With an organic and plant-based menu, owner Brennah Lambert is focusing on bringing healthy and sustainable vegan meals to her guests. Customers can order their meals online from a weekly rotating menu. The Black- and queer-owned café will be a space where people can relax and enjoy a good meal. Menu items include sweet potato breakfast bowls, Buffalo chickpea salad, and zucchini corn fritters, as well as many other creations that are all plant-based, of course.

Busy Bee Organics, Jersey City

This gluten-free and organic café is opening a second location in Jersey City in just a few days. Although they haven’t revealed the exact location of their new endeavor, the owner teased that it will be closer to the downtown area. Using local produce from New Jersey, New York and Pennsylvania, Busy Bee serves delicious dishes that start off with a healthy base, like the mushroom slider sandwich and lemon chickpea kale salad. Don’t skip over their specialty drink menu, where you can pick up superfood protein smoothies, seasonal items (like s’mores hot cocoa), and classics like organic coffee and lattes. Red’s Cafe, Marlton

Two popular South Jersey food trucks are joining forces for a new project. Megan Hilbert, owner of Red’s Rolling Restaurant, and her mother, Mary, owner of Mary’s Mobile Diner, will open a new take-out service while also continuing to run their respective food trucks. This take-out café will be serving breakfast and lunch, as well as weekly specials and soups. Breakfast items include cinnamon French toast bites and breakfast sandwiches, as well as paninis, quesadillas, and flatbreads for lunch. Opened February 3, Monday-Friday 8 am-3 pm with delivery options available.

Van Leeuwen Ice Cream, East Rutherford

The popular Van Leeuwen ice cream brand has opened a new location at the American Dream Mall. With locations all over Los Angeles and New York, this will be their first New Jersey location to open. Available for nationwide shipping, Van Leeuwen’s creative taste is what got them on the dessert radar, with flavors like chocolate chip key lime pie and lemon cookie swirl, as well as vegan options like chocolate oat milk cookie dough chunk and peanut butter brownie honeycomb.
