Hope Jones can remember the day when, as a kid, she mastered the art of chocolate chip cookies and vowed that someday baking would become more than just a hobby.

Flash forward to 1997: At age 33, Jones, a Rumson native and graduate of Cornell University’s School of Hotel Administration, opened her own bakery, Hope, Faith & Gluttony, in Red Bank, where she sold pies, cookies, cakes, and dessert bars—“items my grandmother would have made,” she says. The bakery, located on Red Bank’s west side, was a success at a time when that part of town was struggling. “I couldn’t keep a pie in the place around Christmas,” she says.

Owning a bakery was exhilarating, but, Jones says, “I was working ten to twelve hours a day and completely burned out. I had no social life.” Jones ended up selling the bakery in 2002.

But Jones wasn’t quite ready to give up. In March 2006, resurrecting the name Hope, Faith & Gluttony, she launched a mail-order company, which offers everything from ganache and zucchini bread to butterscotch blondies and chocolate decadence cake.
