At Grissini Restaurant in Englewood Cliffs, a special chef comes in once a week to make several gallons of tomato sauce--the owner, 71-year-old Tony DelGatto. The proof of this particular pudding is in the smelling...

Although he makes sauce just once a week, DelGatto is at the restaurant every day, and on other days makes manicotti and more recipes that he learned helping his mother cook when he was a boy.

The sauce is loaded with meat--spareribs and a whole eye round--melding flavors. A tray full of big cooked meatballs goes in the pot and simmers for hours, absorbing the flavor of the sauce, which is heavenly.
