Or, behold the bread! For pizza this good is indeed the staff of life...

This is Al Santillo's version of a Sicilian pie, not quite as thick as some Sicilians but thicker than his regular pie. This version, topped with a little of every topping, he calls the Grandpa, because it was the favorite of his father, who had eight children and so many grandchildren that he became Grandpa to everyone, even his son.

The toppings on the Grandpa are arranged in criss-crossing stripes so that every bite is different. Although Santillo's Brick Oven Pizza on South Broad Street in Elizabeth sells no slices, Santillo often keeps a Grandpa on the rack, "So that if somebody comes in with their tongue hanging out, they can have a piece."
