Most Parmigiano-Reggiano is aged two to three years, but the factory keeps some around much longer, just to see how it ages...

This wheel was made in May (Maggio) 2001, and is the oldest currently in the aging rooms of the Caseificio Santa Lucia in the Appenine Mountains south of Modena, Italy.

The exterior color is much darker and redder than a new wheel. Inside, if sampled, the cheese would be extremely hard and dry and intense, but also salty, not necessarily more enjoyable than a younger wheel.
