Rosie has the latest information on where NJ chefs are manning the stoves.

Thomas Ciszak, executive chef at Copeland in Morristown, is now part owner and executive chef at Chakra, W 144 Rt 4 E, Paramus (201-556-1530), where his first plan is to revamp and revitalize the menus. (New ones are expected to launch in early to mid September.) Ciszak will continue to oversee culinary activity at Copeland. His wife, Evelyn Hsu Ciszak, is the general manager and sommelier at Chakra.

Nelson Martinez is no longer at Chakra, Paramus.

Fred Mero is the chef de cuisine at Above, 1 South Orange Ave (second floor of Eden Gourmet), South Orange (973-762-5900).

Luke Palladino is the chef/owner of Luke Palladino, Plaza 9, 1333 New Rd, Northfield (609-646-8189); BYO.

Justin Pehovic
, previously sous chef at Copeland in Morristown, is now at Chakra, W 144 Rt 4 E, Paramus (201-556-1530).

Troy Unruh is no longer executive chef at Zylo Tuscan Steak House, W Hotel, 255 River St, Hoboken (201-253-2500).

Brian Walter is the owner of Flannery’s Pub, 200 South Ave, Fanwood (908-322-3700).
