CHEFS ON THE MOVE

Michael Corcoran is the pastry chef at Ursino, 1075 Morris Ave, Liberty Hall Campus of Kean University, Union (908-249-4099). Corcoran studied under James Peterson, famed cookbook author and winner of multiple James Beard Cookbook of the Year awards, at the Institute of Culinary Education. He worked at, among other places, Savoy Restaurant under Peter Hoffman, Gotham Bar and Grill under Alfred Portale, Sign of the Dove under Andrew D’Amico and Andrew Chase, and Union Pacific under Rocco DiSpirito, all in NYC, before taking an eleven-year sabbatical from the business.
Roberto Fahseni is the executive chef at Acappello, 398 Bloomfield Ave, Montclair (973-746-2553); BYO.
Carmine Spinazzola is the executive chef at Nero’s Grille, 618 S Livingston Ave, Livingston (800-55-NEROS). He received his formal training at Le Cordon Bleu.
