Former Ryland Inn chef/owner Craig Shelton, back in NJ after a stint in Texas, is now a partner at Skylark on the Hudson, a stylish diner located at 25 River Drive South, Jersey City, in the Newport development.

After closing the Ryland in Whitehouse, Shelton was a consultant for the Skylark Diner and Lounge in Edison, owned by Constantine Katsifis, who is also involved in the new Skylark project.

In Houston, Shelton was executive chef and managing partner of the Inn at Dos Brisas from November 2010 to June 2011.

Skylark on the Hudson will be open from 7:00am to 2:00am Monday through Saturday, and 7:00am to 1:00am on Sunday.

The 8,000-square foot 280-seat restaurant also will have a full bar, including a cruvinet, a counter overlooking the Town Square, and a designated take-out area.

Supported by online and smart phone order capabilities, the restaurant plans to meet the demands of the busy lifestyles of local residents. The lounge area will provide a festive space to host business cocktail parties or a happy hour for friends and family.
