NEW EXECUTIVE CHEF AT CRYSTAL SPRINGS
John Greeley, who previously was at the 21 Club in New York City, has been named new executive chef at Crystal Springs Resort, One Wild Turkey Way, Hamburg. In his new position, Greeley oversees all the resort’s restaurants, including Crystal Tavern, Springs Bistro and the seasonal outdoor Chef’s Garden restaurant, which opens for the season on Memorial Day.

Greeley grew up with a large extended family in Ridgewood, where locally grown produce and ingredients from the family’s garden were an important part of meals. He trained as an artist and received a BFA in painting and sculpture in Savannah, Georgia, and he also became versed in Southern cooking and Low-Country cuisine in the kitchen of Gerry Klaskala’s 45 South. Greeley staged at several top restaurants in New York City, including Per Se and pursued numerous culinary adventures abroad, including his time presiding over a cooking school in Tuscany. After graduating, he began working at New York’s 21 Club under chef Michael Lomonaco. In his 12 years there chef Greeley rose through the ranks and, in 2007, was named executive chef. He uses the visual arts as an aid in the kitchen, sketching out his dishes before testing them, and also keeps books full of hand drawings documenting his meals in New York.

For the seasonal re-opening of the outdoor Chef’s Garden, which operates from Memorial Day until late September, Greeley is creating an all new, Southern-inflected menu that highlights the wood-fired grills and smokers in the restaurant.

DALE TALDE BRINGING TALDE TO JERSEY CITY
Talde, Jersey City
expects to open in the Fall 2014 at 8 Erie Street. The property will house two concepts: TALDE Jersey City and Carrino Provision. TALDE Jersey City will feature Chef Dale Talde’s signature Asian-American cuisine, and Carrino Provisions—whose menu will also be overseen by Dale—will be an Italian restaurant with a specialty-goods market and café. Both concepts are a partnership between Dale Talde, David Massoni, John Bush and HGTV’s Kitchen Cousins stars Anthony Carrino and John Colaneri. Carrino and Colaneri are also designing both restaurants. Chef Talde has been on Bravo’s Top Chef twice and is the chef/partner of the highly acclaimed Talde in Brooklyn.
