CHEF MICHAEL CARRINO AT BEARD HOUSE, NYC
On June 13, A Walking Through Naples dinner will be held at the James Beard House, 167 West 12th St, New York City, with Michael Carrino, executive chef/owner of The Pig & the Prince, Montclair, and winemaker Maynard James, Keenan of Caduceus Cellars and Merkin Vineyards, Jerome AZ. The following menu will be presented:

Hors oeuvres: House-cured salami and salumi; piccolo pizza fritti; chicken-liver arancini; and artichoke croccante.

CHANGES AGAIN AT ESTY STREET IN PARK RIDGE
Stephen Hilla, who was the opening chef at Esty Street in Park Ridge from 1992 to 1994 and returned there in January 2014, has now left his position as executive chef. He was the fourth executive chef who has left this restaurant since April 2013 when Adam Weiss, who won the Ultimate Chef of Bergen County in 2013 and 2014, and was there for 13 years, was let go. After chef Weiss, Chris Curado took over for a short time followed by Anthony Lo Pinto in November 2013, who didn’t have time to even heat up the stove before he left. What do you think?

Stephen Hilla, previously from Esty Street in Ridgewood, can now be found at 3 Forty Grill, 340 Sinatra Drive, Hoboken, which features seafood, steaks, a raw bar and martini lounge (201-217-3406). Chef Hilla will be making no major changes, but will be tweaking the menu.

CHANGES AT GP’S HAMILTON PARK, JERSEY CITY
Jim Galileo is no longer executive chef at GP’s Hamilton Park, 236 Pavonia Ave, Jersey City (201-418-8800). In 1993, while at Oceana in New York City, Galileo won Best New Chef from Food & Wine magazine. The new chef de cuisine is Pasquale Giannella.


THE WASHINGTON HOUSE, BASKING RIDGE

Crawford Koeniger is the executive chef at The Washington House, 55 S Finley, Basking Ridge (908-766-7610). He previously worked as sous-chef in Roots Steak House in Summit, The Pluckemin Inn in Bedminster and most recently Eno Terra in Princeton.
