Chefs Matty Russoniello senior and junior are manning the stoves at Depot Square Bar & Restaurant, previously Erie Saloon, at 25 Depot Square, Montclair (973-931-4389).

KEN SALMON
Ken Salmon, a CIA graduate, is the chef and co-owner of Upstream Grille, 161 Rt 181, Lake Hopatcong (973-663-2222). He was previously the executive chef at Mohawk House in Sparta. An American-fusion menu is offered; full bar.

CHEF KWAME WILLIAMS

Vital Dining has recently opened at 387 Bloomfield Ave, Montclair, under the direction of chef Kwame Williams who studied at the Institute of Culinary Education and worked at the Ryland Inn, Rat’s and The Bernards Inn. He co-owns the restaurant with his sister Nataki Williams. Some menu items include: chicken wings, kale salad, stuffed avocado, pineapple-ginger lamb, ribs or salmon, BBQ poussin, seared cod, vegan carrot cake and coconut rice pudding. The restaurant is open Monday through Thursday from 11AM to 10PM, Friday and Saturday 11AM to 11PM and Sunday 9AM to 8PM. Phone: 973-655-9500; BYO.

NEW CHEFS AT SPIGOLA RISTORANTE, HAMILTON

Dominic Conti, is the new executive chef and Rich Berardi is the new sous chef at Spigola Ristorante, Deer Path Pavilion, 3817 Crosswicks-Hamilton Square Road, Hamilton (609-585-5255).
