ADAM ROSE
Adam Rose is the executive chef/owner of Villalobos, 6 South Fullerton Ave, Montclair (973-337-6667); BYO. Earlier in his career, Adam was instrumental in the launch and day-to-day operations of Restaurant Passioné (Montclair) and Bin 14 Trattoria & Wine Bar (Hoboken), where he earned an "excellent" rating from The New York Times. Most recently, Adam was executive chef at New Jersey Performing Arts Center in Newark. A graduate of the New York Restaurant School (now the Art Institute of NYC). Menu items at Villalobos, which features traditional Mexican ingredients and recipes influenced by his travels and experiences, include: yellowfin tuna with watermelon; guacamole with smoked tomatillo and sea urchin; crispy pork skin with lime, morita and queso fresco; chili-braised chicken; adobo-roasted pork; grilled skirt steak; braised goat in red mole with plantains; braised rabbit in Oaxacan green mole; and grilled shrimp with jicama curtido, romaine and cherry tomato salsa. Though BYO, a drink menu is offered including agua frescas, Mexican sodas and slushies. The restaurant is open for lunch and dinner Tuesday through Sunday. Adam is a native of Nutley, where he presently resides.
