An Epic Collaborative Dinner Takes Root in Old Bridge

Mark your calendar for these chef match-ups that promise memorable meals.

Call it a celestial collaboration.

The culinary stars are aligning Sunday evening, August 6 at Heirloom Kitchen in Old Bridge when in-house executive chef David Viana welcomes Anthony Bucco of Restaurant Latour in Sussex County to his home turf to cook, a 10-course fish dinner together.

Heirloom labels it “epic.” That might cover it.

We don’t know the menu, save that fish is the primary descriptive being used. Frankly, the only thing any food-centric person in the Garden State needs to know is that these two monumental talents will be at the helm of a dinner for the ages.

Bucco’s Restaurant Latour is a NJMonthly Top 25 Restaurant winner. Two months ago in Table Hopping, Viana’s food was called “pitch perfect,” with the chef possessing a “deep-seated understanding of ingredients and their flavors.”

The cost is $125 per person, and reservations are required.

Another popular chef is going on the road to join forces with the host chef of an acclaimed restaurant.

Todd Villani, chef-owner of the loved and sadly shuttered Terre a Terre in Carlstadt, will share stoves with wunderkin Robbie Felice, executive chef at Viaggio in Wayne, in Felice’s kitchen on Sunday, August 20 for the Harvest Drop Tomato Dinner.

First: What’s Harvest Drop?

According to Villani, Harvest Drop collates produce from 45 different farms in New Jersey and eastern Pennsylvania and distributes the ingredients to restaurants. Everything is delivered within 24 hours of harvest.

For this dinner, tomatoes from the following farms will be used: Peck Farms (Randy Peck), Freehold Township; Kuscowski Farms (Debbie Kuscowski), Hammonton; and Rolling Hills Farm (John Saquillo), Lawrenceville.

The chef’s high-season menu will feature Yellow Tomato Gazpacho, Heirloom Tomato Panzanella, Lemongrass Meatballs with Tomato Jam, Spaghetti alla Bottarga, Pork Loin (with tomatillo), and Tomato Granita.

The cost is $85 per person, not including tax and tip. Dinner time is 5:30 pm.
