Chef James Laird Presents a Tomato Extravaganza

Plus: A new sommelier at The Peacock Inn in Princeton.

On Thursday, August 11, Restaurant Serenade, 6 Roosevelt Avenue, Chatham, will host a five-course Tomato Extravaganza dinner with wine pairings. The following menu will be presented by executive chef/owner James Laird:

Pete’s Tomato Consommé—beefsteak, shrimp dumplings, ginger
(Gruner Veltliner, Forstreiter Krems, Austria 2013)

Local Fluke Crudo—purple Cherokee tomato, zucchini flower tempura, artichokes, basil
(Sauvignon Blanc, Domaine de Mauperthuis Chablis, France 2012)

Cured Duck—fried green tomatoes, purslane, balsamic syrup
(Lagrein, “Greggi” Autoconi Trentino-Alto Adige, Italy 2010)

Berkshire Pork Duo—barbeque loin, slider, local chanterelles, oven-dried tomatoes
(Tempranillo Blend, San Vincente Rioja, Spain 2009)

Panna Cotta—Romano plum, cheesecake, basil ice cream
(Nebbiolo Rose, Ettore Germano Piemonte, Italy 2012)

Charles C. Townsend IV is the new sommelier at The Peacock Inn, 20 Bayard Lane, Princeton. Townsend has The Certified Diploma from The Court of Master Sommeliers and presently continues to pursue his Advanced Level Diploma having passed two of three portions. He has spent time working with Mario Batali, Emeril Lagasse, Wolfgang Puck, and Thomas Keller. In addition to his pursuits as a sommelier he is actively studying for his Cicerone diploma, which is a certification program for beer.
