Hot Off The Burners: Viana-Carrino Menu For Sunday’s Chef’s Dinner

The creative minds of two of New Jersey’s most innovative chefs are collaborating on a meat-lover’s menu that will be served starting at 6 pm Sunday, September 17 at Heirloom Kitchen in Old Bridge.

Heirloom’s chef David Viana will be joined by Mike Carrino, chef at Pig & Prince in Montclair, at the stoves to present a series of dishes that focus on meats prepared to educate the diner and expand the palate. It’s a one-of-a-kind, once-in-forever experience.

Here’s the nine-course menu that the chefs just dotted I’s and crossed T’s on:

MEAT LOVER’S MENU

* Vietnamese Caramel Chicken

–braised celery, peanut, jalapeno

* Risotto of Chicken Fifths

–confit, cured hens yolk

* Duck Breast

–johnny cakes, peach bourbon maple

* Crêpe of Foie Gras Mousse

–braised leg and neck and late-harvest sliced carrots, parsnip purée

* Veal Raviolo “Saltimboca”

–sage, tomato, prosciutto brodo, fried egg yolk

* Tagliatelle Pasta

–preserved black truffle, smoke pastrami calves tongue

* Pork Wellington

–sweet potato, mushroom duxelles, bacon jus

* Tête de Cochon

–pickled “fallen angels,” potato, bitter greens, sauce civet

* Sticky Rice Cake

–soy caramel, peanut, sanguinaccio dulce gelato

And there’s a bonus:

Donated wines will be poured by Nick Pizzonia, finalist in the Wine Professional category of the 2017 Garden State Culinary Arts Awards. The complimentary organic, artisanal wines curated by Pizzonia will be specially matched to the Viana-Carrino dishes.

The price, not including tax and tip, is $140 per person.
