Pastry Chef Debbie Schear Comes to Esty Street

PASTRY CHEF DEBBIE SCHEAR
Debbie Schear is the new pastry chef at Esty Street, 86 Spring Valley Road, Park Ridge (201-307-1515). For the past twenty years, she has worked making desserts for several restaurants in Passaic and Bergen counties as well as for the New York Metropolitan Opera. She also founded DEBlicious Desserts in 2013. Desserts on her spring menu include: chocolate ravioli with cannoli cream, shaved white chocolate and raspberry coulis; strawberry rhubarb cobbler with streusel crumble and house made cinnamon ice cream; French apple cake with Pink Lady apples, vanilla custard and house made caramel sauce; and lemon-scented Montrachet cheese cake with almond cookie crust and blood-orange gelee.

Matt Arlington, previously from The Brass Rail and Bin 14, both in Hoboken, is the executive chef/partner at Union Hall, 306 Sinatra Drive, Hoboken (201-659-7074).

CHEF WILL MOONEY FROM THE BROTHERS MOON, HOPEWELL
Chef Will Mooney, owner of The Brothers Moon, 7 W Broad Street, Hopewell, has announced that his new spring menu will feature asparagus, wild foraged ramps, Shibumi mushrooms, strawberries, local carrots and pea tops, plus local cheese from Cherry Grove and their homemade desserts. Paul Holzheimer is the chef/co-owner with Ashley Coyte, who runs the front of the house at The Grand Tavern, 1105 6th Avenue, Neptune (732-774-0120). They both previously worked at Pascal & Sabine, Asbury Park.
