Chef Todd Villani Appearing at Beard House

The Terre a Terre executive chef will present a Garden State Bounty dinner on Tuesday, August 11.

On Tuesday, August 11, a Garden State Bounty dinner will be held at the Beard House, New York City with executive chef Todd Villani of Terre a Terre, Carlstadt presenting the following menu:

Hors d’oeuvres: Juniper-Cured Goffle Road Poultry Farm Duck Prosciutto with Ginger Mustard on Pretzels; Vietnamese Crab Spring Rolls with Rice Noodles, Spiced Peanuts, and Micro-Shiso; East Coast Oysters with Borage, Riesling Mignonette, and Cucumber Caviar; New Jersey Heirloom Tomato Gazpacho with Lovage and Pickled Ramps

DINNER

Tuna with Beet Mousse, Melon, Radishes, and Microgreens

Viking Village Scallops with Charred Corn, Shibumi Farm Mushrooms, and Corn Milk

Duck Confit with Seeds-and-Grains, August Lettuces, Blackberry Confiture, and Nutmeg Vinaigrette

Nicolosi Fine Foods Berkshire Black Pork Belly with Sumac Grits, New Jersey Peaches, and Wild Basil

Elysian Fields Farm Lamb with Caramelized Leek–Lamb Bacon Gratin and Rapini Purée

Lavender–Raspberry Crostata with Lemon–Mascarpone Gelato, Raspberry Curd, and Frangipane

A selection of fine wines will be served with this dinner.

PAUL “GUS” GUSTAVSEN

For the past 25 years Paul “Gus” Gustavsen was a fishmonger at the Fulton Fish Market; he is now proprietor at Gus & Co Seafood, 626 Valley Road, Montclair (973-783-3474). In-house fish chef is Wiet Radimer.

TIM KOHLHEIM

Owner/chef Tim Kohlheim has opened his second Shore Fire Grill at 1718 N Long Beach Boulevard, Surf City (609-494-7100). His other location is in Barnegat.

MANUEL PEREZ

Executive chef Manuel Perez has left the Peacock Inn in Princeton and has taken a job as chef de cuisine at Bouley, New York City. His wife Cynthia, who is also a pastry chef at the Peacock Inn, has also left.

MENY VEKNIN

Congratulations to Meny Veknin, chef/owner of Mish Mish Café in Montclair, for recently beating out three other chefs and winning $10,000 on Food Network’s Chopped.
