Whether fries are served straight, thick, shoestring, wedge, waffle or the many other varieties, we all love this ultimate comfort food. Fries! By Blake Lingle offers us a history of the fry as well as historical information on whether it was the Belgians or the French who created the first French fry. Other interesting tidbits of information include what fries are called around the world and how they are served. For example, in Mexico they are called papas a la francesa, and in Poland frykis. In Canada, they are called poutine and topped with hot gravy and cheese curds. One chapter provides detailed information on how to cook fries including how to cut, type of fryer to use, strainers, tossers, scoopers and much more. A few recipes are included but this is an informational book rather than a cookbook. Author Blake Lingle is the owner of Boise Fry Company in Boise, Idaho.
