Redux Opens in Madison

Chef Robert Ubhaus, previous owner of Resto and Rob’s Bistro in Madison, has opened Redux: the Restaurant & The Market at 3 Central Avenue, Madison (973-845-6263). The restaurant features Modern American small plates, using local ingredients as the seasons allows. At Redux, there are two options: dine in the main dining room or at the Chef’s Counter in the kitchen. Sous Chef will be Michael Martello Jr.

The Market at Redux, next door to the restaurant, is a specialty and prepared foods retail shop, which offers cheese, charcuterie, housemade soups, a butcher case and much more. The Market will also specialize in off-premise catering and prepared party platters.

TRAMA’S TRATTORIA OPENS IN LONG BRANCH
Trama’s Trattoria has been opened by chef Pat and Laura Trama at 115 Brighton Avenue, Long Branch, Trama was previously executive chef at Ama in Sea Bright. Menu items include: shaved baby artichoke salad; rigatoni with fennel sausage, just-shucked peas, Jersey tomatoes and parmesan cream; Mediterranean bronzino filet with tomato butter, zucchini chips, tomatoes on the vine; old school veal parmesan; Florentine-style rib eye; and classic tiramisu with espresso-soaked lady fingers, sweet mascarpone, coco powder. Whole Foods Market Millburn-Union has opened BBQ, 2245 Springfield Avenue, Vauxhall, that offers flavors of Kansas City, Memphis, and the Carolinas along with smoked meats, sandwiches, mac & cheese platters and salads and a wide selection of beer and wine (908-688-1455).

Bollywood Grill, offering Indian street food, has opened at 435 N Beverwyck Road, Parsippany (973-257-1444); BYO.
