Spicy Garlic Shrimp

“Everyone loves shrimp, and there are so many ways to prepare them,” says Andrew “Drew” Araneo, chef/owner of Drew’s Bayshore Bistro in Keyport. “This version brings a little bit of Louisiana to the table.”

Serves: 4

Ingredients:

 

2 Tbs. Olive Oil

 

1 Lb. Large Shrimp, peeled & deveined

 

Salt & Pepper

 

1/4 Cup Chopped Garlic

 

6 Oz. Dry wWhite Wine

 

4 Oz. Hot Sauce (Franks, or any Louisiana style will do)

 

2 Tbs. Unsalted Butter

 

¼ cup chopped parsley

 

4 Slices Garlic Bread

Preparation:

 

Place large sauté pan over high heat.

 

Season shrimp to taste with salt & pepper

 

When pan is hot add chopped garlic and stir until it begins to brown.

 

Add shrimp and toss to coat with garlic & oil.

 

Let shrimp cook on one side, then turn shrimp (use a pair of tongs)

 

After shrimp are turned in pan pour in white wine.

 

Allow wine to come to a simmer to cook off alcohol.

 

Add hot sauce, and toss in pan to coat shrimp.

 

When shrimp are finished cooking remove from pan leaving sauce behind.

 

Return sauce to heat and add butter & parsley.

 

Swirl pan to help melt butter & keep it from breaking.

 

Place Garlic Bread on  plate & top with shrimp & sauce.
