Hamachi “real wasabi,” yuzu tea (chef Santos)
Hushpuppy, smoked cream, trout roe (chef Gregg)
Salt cod ravioli, roasted onion fonduta (chef Santos)
Tilefish and foie gras nage (chef Gregg)
Dessert Course: Surprise by the chefs

ALEX ANICITO AND JOHN THOMAS
Chefs Alex Anicito (previously from Pig and Prince in Montclair) and John Thomas (former sous chef at Zepplin Hall Biergarten in Jersey City and Zinburger) have opened Meat-A-Tarian, at 10 Park Street, Montclair (862-333-4127).
HANK BARRETT
Hank Barrett is the new executive chef at the Ho-Ho-Kus Inn & Tavern, One East Franklin Turnpike, Ho-Ho-Kus (201-445-4115). Barrett is a graduate of the Philadelphia Restaurant School with stages in Spain and Thailand. He has worked in some of Manhattan’s most innovative kitchens, including Union Square Café. Most recently, he was executive chef at Sangria in Mahwah. Chef Barrett joins the culinary team of Assistant executive chef Troy Piegaro and sous chef Jon Suarez.
MICHAEL OSTROS
Michael Ostros, previously executive chef at McLoone’s Boathouse in West Orange, Giulia’s Kitchen in Cliffside Park and Regina’s Steakhouse in Teaneck, is the new chef at Bistro Capri, 24 North Van Brunt Street, Englewood (201-871-7155).
