Food for Thought

The Farm Cooking School at Tullamore Farms (a working grass-fed cattle and lamb farm on the Delaware River) offers cooking classes and as well as dinners on Wednesday evenings under the direction of founder and chef Ian Knauer and chef Shelley Wiseman.

THE FARM COOKING SCHOOL, STOCKTON
Both Knauer and Wiseman have impressive credentials. Knauer previously worked in the test kitchens of Gourmet Magazine and is the author of The Farm: Rustic Recipes for a Year of Incredible Food. Wiseman was the Travel Food Editor and a recipe developer at Gourmet and the author of two cookbooks the latest which is Just Tacos. She had a cooking school in Mexico City and also ran the kitchens at Fine Cooking Magazine.

Attendees at the cooking classes can learn everything from knife skills to cheese making to baking to complex French sauce-making. Some upcoming classes include:

March 19: Baking and Pastry Techniques – Brioche and Pate Choux, 10 AM to 2 PM; $85.
March 21: Techniques of Cooking Level 1—Roasting, 10 AM to 2 PM; $85.
March 26: Baking and Pastry Techniques—Meringue, 10 AM to 2 PM; $85.
March 28: Techiquest of Cooking Level 1—Poaching, 10 AM to 2 PM; $85.

Additionally, every Wednesday evening a sit-down four to five-course dinner is served from 6:30 to 8:30 PM; BYO. The cost is about $75 depending on the menu which changes weekly. All ingredients for the dinners and cooking school come from Tullamore Farms and other nearby purveyors.
