Michael Burbella, previously of Trattoria Fratelli, Ridgewood, and Grand Tier and Gramercy Tavern, NYC, is the executive chef at Table 8, 615 Bloomfield Ave, Montclair (973-746-2233); BYO.
Lucas Manteca, previously of Sea Salt, Stone Harbor, is the executive chef at the Virginia Hotel, 25 Jackson St, Cape May (800-732-4236).
Paul Viggiano has resigned from his position as chef de cuisine at Docs of Sparta, 191 Woodport Rd, Sparta (973-729-0555), to explore other opportunities. Chef Viggiano wrote in an e-mail, “The parting was peaceful, and I only wish Don and all the wonderful employees at Docs the greatest of success.
