Chefs on the Move

Rosie is here with the latest news on where NJ chefs are manning the stoves.

Wesley Holton is the executive chef at Michael Mina’s SeaBlue at the Borgata Hotel Casino & Spa, 1 Borgata Way, Atlantic City (609-317-8220). He was formerly at Daniel Boulud Brasserie.

Lisa LaValle-Finan has opened the Old World Table Supper Club, 203 Lorraine Ave, Montclair. Reservations and pre-payment can be made through Open Table or PayPal.

Kevin Sbraga
, previously executive chef at Rat’s Restaurant, Hamilton, and winner of the seventh season of Bravo’s Top Chef, has opened Sbraga (www.sbraga.com), 440 S Broad S, Philadelphia (215-735-1913). This 65-seat modern American restaurant will feature a $45 four-course prix-fixe menu with options, and guests can order à la carte at the bar. A chef’s tasting ranging from eight to ten courses will also be available. Wines can be paired with each course, or guests may choose a wine flight to complement their dinner. The pastry chef is Jesmary Sbraga.

Peter Turso is the executive chef at Ursino, 1075 Morris Ave, Liberty Hall Campus of Kean University, Union (908-249-4099). He has worked at the Stage House Inn, Restaurant Nicholas, Restaurant David Drake, and the French Laundry.
