CHEFS ON THE MOVE

Carlo Carbonaro is the executive chef co-owner of Bottagra South 59 South Orange Ave, South Orange (973-378-9222); BYO.
Sam Mickail is the executive chef/co-owner at Sam Mickail's CUT Steak House, 4Sixty6 Nightclub and event complex, 466 Prospect Ave, West Orange; 973-474-9896. Chef Mickail was born in Cairo, raised in France, trained in Switzerland, and staged in the finest kitchens in Europe. Prior to CUT, Mickail was affiliated with The Terrace on the Upper West Side, Highlawn Pavilion, and Il Tulipano. He was opening chef at Rare The Steak House in Cedar Grove and most recently, chef/partner at Frank's Waterside in Edgewater.
There are two new faces at Fromagerie, 26 Ridge Road, Rumson (732-842-8088). Travis Newman, who recently relocated from David Burke Prime at Foxwoods Casino Resort in Connecticut, is the new general manager, and John McGinnis is the new sommelier and mixologist. John was formerly behind the bar at Doris & Ed's.
