MICHAEL ARNONE’S CRAWFISH FEST
Louisiana and New Orleans-style music, food and camping will be featured from Friday, June 3 to Sunday, June 5 at Michael Arnone’s Crawfish Fest at the Sussex County Fairgrounds in Augusta. Menu items, which will cost $10 or under include: boiled crawfish, crawfish etouffee with rice, shrimp and grits; chicken and pork sausage jambalaya, beignets and much more. RYAN BRINING
Ryan Brining is the owner of the newly opened White Maple Café, a 50 seat restaurant, at 47 E Ridgewood Avenue, Ridgewood, offering a new American menu (201-447-1953); BYO. Brining helped relaunch the Rainbow Room City and has worked with Daniel Boulud at Daniel both in New York City.
SCOTT TOLHURST
Scott Tolhurst is the executive chef at Enoteca Ursino, 1075 Morris Avenue, Union (908-662-9080). He attended Johnson & Wales University, which lead to an externship at the Michelin starred Ristorante da Riccardo in Asiago, Italy. Upon his return to the states, chef Tolhurst took a position at the Bobo Restaurant in New York City under James Beard Award winning chef Patrick Connolly. From there, he took a position with Starr Restaurants in Research and Development and later moved to New Jersey, where he took over the kitchen at Crystal Springs Tavern, Crystal Springs Resort. Most recently he has worked with chef Tom Collicchio at Craft Restaurant.
