BREAKING NEWS: Award-Winning Chef Returns

Chef Adam Weiss, who won the 2013 and 2014 Ultimate Chef of Bergen County competitions, is the new executive chef of Due, an Italian BYO in Ridgewood.

Weiss had been executive chef of Esty Street in Park Ridge for 12 years until he left that position last spring.

He says he expects to slowly incorporate his own take on modern Italian cooking into Due’s menu.

Due (meaning "two" in Italian and pronounced doo-ay) is at 18 E Ridgewood Ave. 201-857-3232.

Why Due? It is chef/owner Chris Tarta’s second restaurant, his first being Bella Campania in Hillsdale.

“I am very excited to have Adam bring his eclectic modern approach to our restaurant,” Tarta said. “We are really looking forward to seeing the menu he will create, with its complex yet restrained dishes and their endless layers of flavor.”

Chef de cuisine Galice Ryan of Satis in Jersey City has accepted a position with Keith McNally’s newest New York City restaurant, Cherche Midi.

Satis co-owner Michael Garcia wrote, “We are sad to see Galice go, but very proud of his accomplishments here at Satis over the last 3.5 years. Michael Fiorianti remains our executive chef, while the new chef de cuisine is David Werner, formally of Landmark Hospitality.

Werner worked for Landmark at Liberty House in Jersey City, where he was sous chef. Werner previously was executive chef of Mompou in Newark and Market in Montclair,
