A new restaurant from chef George Georgiades, late of the beloved Varka in Ramsey, has opened in Paramus. Eons: Greek Food for Life is the chef’s spinoff of the restaurant he opened to much acclaim in Manhattan. The fast-casual concept is a Greek version of Chipotle.
As he was building out Eons earlier this year, Georgiades told Table Hopping that he “got the idea for Eons when I was eating swordfish kebabs. It was too big! Too much. I wanted diners to have more options, to be able to pick a protein and build [a meal] from there, making their own choices.” His goal is to deliver “good quality to the masses.”

Phorage on the Hudson, a Thai-Vietnamese restaurant from restaurateur James Wang, is scheduled to open later this month at 725 River Road in Edgewater. The restaurant’s culinary inspiration is the fare of Southeast Asia’s floating markets. On the menu will be beer-battered Vietnamese crepes, various renditions of pho, selections from a noodle bar and all manner of seafood. There will be vegan options as well.
