Chef Ryan DePersio at James Beard House

Fascino chef will present an Italian Seafood Celebration dinner on Tuesday, December 15.

On December 15, chef Ryan DePersio will be at the James Beard House, 167 W 12th Street, New York City, presenting an Italian Seafood Celebration dinner. The following menu will be served:

Hors d’oeuvres: Island Creek oysters with blood orange granita; sambuca-cured Scottish salmon with apple butter on toasted crostini; miniature crab tortas with jalapeño sour cream and micro-opal basil; crispy couscous with marinated beets, aged goat cheese, and orange emulsion; and prosciutto-wrapped romaine spears with roasted garlic dressing and ricotta salata.

Grilled octopus with Sicilian olivata, crispy potatoes, and chorizo vinaigrette.

SEASONAL WINE PAIRING DINNER!
A Seasonal Wine Pairing Dinner will be held at The Farm Cooking School (GPS address) 1925 Daniel Bray Highway/Rt 29, Stockton, with wine guru, Carol A. Berman who will be pouring her picks. Berman is the owner of Class in a Glass, and a renowned wine educator. The following is a sample menu: Marcona almonds-olives-manchego; razor clams with chorizo oil; bacalao-stuffed piquillo peppers; skirt steak with poblano dauphinoise; Ian’s radicchio vermouth granite and creme brûlée. 6 to 9 PM; $150; BYO.
