DINNER WITH CHEFS BRYAN GREGG AND PETER MINAKI
On Monday, June 16, Bryan Gregg, chef/owner of Escape at 345 Bloomfield Ave, Montclair, will welcome chef Peter Minaki to Escape to host a four-course, “Escape to Greece” dinner. The following menu will be presented:
Trigona with shrimp butter
Chickpea and sea-asparagus salad with pickled fennel and grilled octopus
Trahana (Greek pasta) with mushroom "Kokkinsto," sweetbread
Braised lamb shoulder with smoked-eggplant puree
Ekmek Kataifi with toasted almonds and coconut curls
Minaki is the creator of the Kalofagas food blog, and a frequent contributor to Greece’s Free Press Gastronomy website. He hosts and cooks for the Kalofagas Greek Supper Club, teaches cooking classes and provides catering services. Minaki, the author of The Everything Mediterranean Cookbook, resides in Scarborough, Ontario.

Robert Angelo, formerly from Michelangelo’s in Newark, is the chef at Riva Blue, a restaurant, lounge and catering facility offering Italian and New American cuisine, at 525 Riverside Ave, Lyndhurst (201-896-2222).
Scott Giordano is the executive chef/owner of The Poached Pear, a contemporary American Bistro, at 816 Arnold Ave, Point Pleasant Beach (732-701-1700). Giordano was formally sous chef at the Saddle River Inn and executive chef at Whispers.
