RESTO, CONTEMPORARY FRENCH CUISINE
Scattered over the truffled pea sauce that encircled day-boat scallops was “carrot caviar,” made from carrot juice that was dissolved in sodium alginate, put into a pipette, and then dropped into calcium chloride, transforming the juice into tapioca-type pearls. We weren’t at Ferran Adrià’s El Bulli in Spain, where molecular gastronomy was born, and we weren’t at Blu, Montclair, where Zod Arifai is known to create culinary surprises such as olive oil powder and mushroom “risotto,” sans rice, made from mushroom juice that’s turned into a form that resembles grains of rice.
On July 26, The Northern NJ Alumni Association of Theta Phi Alpha sorority is hosting a benefit luncheon for one of their young alumni, Stephanie Coonan of Hazlet who was recently diagnosed with a rare form of stomach cancer. The benefit luncheon will take place at Noon at Trinity Restaurant, 84 Broad Street, Keyport.
